About This Recipe
Barley and figs have been part of Mediterranean food traditions for thousands of years. In ancient Greece, barley was one of the most important everyday grains - used in breads, porridges, and simple drinks long before wheat became the dominant grain of the modern kitchen. Figs were equally prized: naturally sweet, easy to dry and store, and able to pair beautifully with grains, dairy, honey, and herbs in ways that still feel entirely natural today.
This smoothie does not claim to be an ancient Greek recipe. What it does is take those same ingredients - barley, figs, yogurt, honey, mint, and cinnamon - and blend them into something that feels both nourishing and genuinely modern. Soaked figs bring a deep, jammy sweetness. Cooked barley gives the smoothie real body without making it heavy. Greek yogurt (or plant-based yogurt for the vegan version) adds creaminess and a gentle tang. Mint keeps everything bright. Cinnamon gives warmth. The result is a smoothie that tastes grounded and elegant at the same time.
If you follow a plant-based wellness routine, this smoothie pairs beautifully alongside one of the plant-based mains from the Hanuvier Wellness Hub. The Mujadara shares the same ancient-grain spirit, while the Tuscan White Bean and Rosemary Skillet makes a deeply satisfying and nutritionally complete meal alongside this drink. This smoothie is delicious as written, but if you want to deepen the protein content and add a soft vanilla note, stir in a serving of Hanuvier's Plant Protein & Collagen Booster before blending - a systems-based formula with a complete amino acid profile and 5 collagen-supporting nutrients, developed on the science of how wellness and beauty work together. It blends seamlessly into this recipe.

Ingredients
Smoothie Base
- 1/3 cup cooked barley, cooled (pearl barley or hulled barley both work)
- 3 dried figs, stems removed and roughly chopped
- 1/4 cup hot water, for soaking the figs (use 2 tbsp of the soaking liquid in the smoothie)
- 3/4 cup unsweetened almond milk or oat milk, chilled
- 1/2 cup plain Greek yogurt (vegetarian version) - or 1/2 cup unsweetened plant-based yogurt (vegan version)
- 1 tbsp chia seeds
- 1/4 tsp ground cinnamon
- 1 tbsp fresh mint leaves, loosely packed
- 1/2 tsp vanilla extract
- 1 tsp honey (vegetarian version) - or 1 tsp date syrup (vegan version) - optional, add only after tasting
- 1/4 cup ice cubes
Optional - Hanuvier Vanilla Variation
- 1 serving Hanuvier's Plant Protein & Collagen Booster (vanilla) - for a soft vanilla note and added plant-based protein
- 2-4 tbsp additional almond milk or oat milk, only if needed to maintain a drinkable consistency
Optional Garnish
- 1 thin fresh or dried fig slice
- 1 small fresh mint leaf
- 1 tiny pinch ground cinnamon
- 1 tsp chopped pistachios or walnuts (omit for nut-free)
Instructions
- Prepare the barley: use 1/3 cup cooked and fully cooled barley. If cooking barley specifically for this recipe, follow the package instructions, then cool completely before blending. Do not add hot barley to the blender - it will warm the smoothie and change the texture.
- Soak the figs: remove the stems from 3 dried figs and roughly chop them. Place in a small bowl and pour 1/4 cup hot water over them. Soak for 10 minutes until softened. After soaking, use both the softened figs and 2 tbsp of the soaking liquid in the smoothie. Discard any extra soaking liquid or save to thin the smoothie if needed.
- Add liquid to the blender first: pour 3/4 cup chilled almond milk or oat milk into the blender. Starting with liquid helps the blades move smoothly and prevents the barley, chia seeds, or figs from sticking under the blade.
- Add the creamy and grain base: add 1/2 cup Greek yogurt (or plant-based yogurt) and the 1/3 cup cooked barley.
- Add figs and flavor ingredients: add the soaked figs and 2 tbsp fig soaking liquid, 1 tbsp chia seeds, 1/4 tsp ground cinnamon, 1 tbsp fresh mint leaves, and 1/2 tsp vanilla extract. Do not add honey or date syrup yet - taste first after blending, as the figs may provide enough sweetness.
- Add Hanuvier, if using: if adding Hanuvier's Plant Protein & Collagen Booster, add it now. Keep 2-4 tbsp extra plant milk nearby and add only if needed.
- Add ice and blend: add 1/4 cup ice cubes. Blend on low for 10 seconds, then increase to high and blend for 45-60 seconds until creamy and mostly smooth. If the smoothie is too thick, add 1 tbsp plant milk at a time, up to 4 tbsp, until it reaches a drinkable consistency.
- Taste and adjust: taste before serving. Add 1 tsp honey (vegetarian) or date syrup (vegan) if you want more sweetness. Add 1 tbsp plant milk if too thick, 1 small mint leaf if you want more freshness, or a tiny pinch more cinnamon for warmth. Adjust one thing at a time.
- Serve immediately: pour into one large glass or two small glasses. Garnish with a fig slice, mint leaf, dusting of cinnamon, and chopped pistachios or walnuts if using. Serve cold.
Chef's Tips
- Cook barley in advance. Barley takes 25-40 minutes to cook, so plan ahead. Cook a larger batch, refrigerate it, and use throughout the week in smoothies, grain bowls, or soups. Cooled barley blends much better than warm barley, and the smoothie comes together in under 5 minutes when the barley is ready.
- Soak the figs even if they seem soft. Even plump dried figs benefit from a 10-minute soak - it loosens the sugars, softens the skin, and produces a soaking liquid that carries real depth of flavor. Using 2 tbsp of that soaking liquid in the smoothie is one of the small things that makes this recipe noticeably better.
- Start without sweetener and taste first. Dried figs are naturally very sweet. Most people find they do not need any additional honey or date syrup. Blend everything first, taste, and only add sweetener if the smoothie genuinely needs it.
- Keep the mint light. 1 tbsp of loosely packed fresh mint is the right amount for balance. Too much mint can overpower the fig and cinnamon. Blend first, then add more mint leaf by leaf if you want a stronger herbal note.
- Serve in a clear glass. The beige-gold color of this smoothie is part of its appeal. A clear glass shows the color beautifully and makes the garnish visible and inviting.

Wellness Connection
This smoothie brings together a small group of ingredients that have each been part of Mediterranean food traditions for a very long time - barley, figs, yogurt, honey, mint, and cinnamon. Fiber from barley and chia seeds, natural sweetness from figs, creaminess and protein from yogurt, and brightness from mint and cinnamon combine into a breakfast that is genuinely satisfying: it keeps you comfortable and energized rather than leaving you hungry an hour later.
At Hanuvier, we see wellness as a pattern of daily choices rather than a single ingredient or product. A smoothie like this - plant-forward, fiber-rich, naturally sweet, and easy to make again tomorrow - is what that looks like in practice. Frequently Asked Questions
Can you put Greek yogurt in a smoothie?
Yes - Greek yogurt is one of the best additions you can make to a smoothie. It adds creaminess, thickness, and protein without the watery consistency that plain milk can sometimes produce. The mild tang of Greek yogurt also balances naturally sweet fruits and ingredients like figs, honey, and cinnamon beautifully. In this recipe, 1/2 cup Greek yogurt gives the smoothie a rich, creamy body that holds up well even with barley and chia seeds blended in.
How do you make a smoothie with Greek yogurt?
Add your liquid to the blender first (plant milk, juice, or water), then add the Greek yogurt and any heavier ingredients like cooked grains or frozen fruit. Add lighter ingredients - chia seeds, spices, fresh herbs - next, then ice last. Blend on low for 10 seconds to break everything down, then increase to high for 45-60 seconds until smooth and creamy. If the smoothie is too thick after blending, add plant milk 1 tbsp at a time until it reaches your preferred consistency.
What can I substitute for Greek yogurt in a smoothie?
Unsweetened plant-based yogurt (coconut, almond, oat, or cashew) is the closest substitute and makes this recipe fully vegan. Silken tofu blended until smooth also gives a similar creamy thickness. Regular plain yogurt works but produces a slightly thinner result. For a dairy-free option with less tang, try a thick unsweetened cashew yogurt - it gives a naturally rich, mild creaminess that works especially well with figs and cinnamon.
Is this smoothie gluten-free?
No - this smoothie contains barley, which is a gluten-containing grain. It is not suitable for anyone with coeliac disease or serious gluten sensitivity. If you need a gluten-free version with a similar texture and nutty grain character, try substituting cooked quinoa or certified gluten-free oats (in smaller quantities) for the barley. The smoothie will have a slightly different flavor but the same satisfying body.
Can I make this smoothie the night before?
This smoothie is best enjoyed immediately after blending for the best texture and freshness. If needed, it can be stored in a covered jar in the refrigerator for up to 12 hours. Shake or stir well before drinking, as barley, chia seeds, and protein powder will thicken the smoothie as it sits. Add 1-2 tbsp almond milk or oat milk before serving if it has become too thick. The mint flavor may intensify slightly overnight.
What is Hanuvier's systems-based approach to wellness and beauty?
The body functions as an interconnected system, with nutrients participating in multiple biological processes and often working alongside one another. Hanuvier uses this systems perspective to develop thoughtfully formulated products that support wellness, beauty, or both through a holistic approach rather than a single-ingredient focus.
